I would just drive it on dry days when the salt will have the least impact and wash the undercarriage regularly like you said.
We never had a problem with mice because we have a cat and litter box...

Yeah I would change the pump. I’ve heard these things can just fail out of the blue and leave you stranded. I keep a spare in my trunk just in case. Don’t forget to get a new gasket as well.
