I set them basically like I used to. Just so I slightly have to move my head, right or left, to see someone next to me.

I'm similar to this, I only have to slightly move my head to see someone almost directly beside me. I can barely see my door handles in my mirror. In fact, I recently moved them out more so I actually can't see my door handles by just millimeters.
For me, it was best to be somewhere like a traffic light where you're stopped, and you can see cars going by you as the pull up to the light in a shorter lane. You can see them through the rear, then the side, then that small spot just next to you and you can adjust accordingly.

I have mine set up to where i can just barely catch both door handles from my "resting" head position

Yeah, they threw me off for a while....but once you get used to them they are excellent.
