If you're gonna do a mirror delete, then you might as well delete both mirrors. All or nothing!
I'm fairly certain that I've never seen an E21 with a single mirror that was destined for the United States market, so I'm thinking that side mirror option was an option in other parts of the world. If you truly want to go Euro then I would highly recommend euro bumpers; there's no other way to do it. :thumbsup

I just need to fabricate the adapter brackets for the rear, then cut a slit in the core support and drill some holes in the frame rail for the front bumper bracket bolts as it mounts different on euro cars.
Edit: Here's Nic's car... looks like he deleted the driver's side too
