Why is that? Dual mirrors was still technically an option back then. Also, I'm already used to it since the 02 doesn't have one
I could buy the drivers side delete plate since it's still available new and just go full aerodynamic no-mirrors

If you're gonna do a mirror delete, then you might as well delete both mirrors. All or nothing!
I'm fairly certain that I've never seen an E21 with a single mirror that was destined for the United States market, so I'm thinking that side mirror option was an option in other parts of the world. If you truly want to go Euro then I would highly recommend euro bumpers; there's no other way to do it.

It actually was available in this market, there's a guy on the forum that has an US spec 1981 with only 1 electric mirror. It is one of those options like sunroof that was almost always ordered by BMW NA. I might just order the drivers side one too.If you're gonna do a mirror delete, then you might as well delete both mirrors. All or nothing!

As for euro bumpers, I already got those too
I just need to fabricate the adapter brackets for the rear, then cut a slit in the core support and drill some holes in the frame rail for the front bumper bracket bolts as it mounts different on euro cars.
Edit: Here's Nic's car... looks like he deleted the driver's side too
