was testing out timing adjustments, thought I should take a video of the wheels since I haven't yet...
You should leave it in auto... It doesn't use the AC much during the winter but it does cycle it from time to time to keep things working properly.
Also, 2-4mpg isn't that accurate; it's more like 1. I tested this with a particular route that involves back roads and highway late at night and found it doesn't make more than a 1mpg difference, if that. It depends on your speed. Even rolling with the windows down on the highway versus using AC is a negligible difference.

Not true. Auto will blow whatever air it needs to so it keeps it at the temperature you set. If it's 0 degrees out, it most definitely isn't blowing ice cold air at you even in Auto.
Auto is meant for year round use. In the summer it'll keep the car cool. In the winter it'll keep it warm.
To maintain air temperature inside the cabin, different vents will blow varying temperature air so it reaches the temperature you specify. If you turn auto off, chances are it will be either too cold or too warm in the car, ensuring you having to fiddle with settings to make it right. Auto prevents the need to constantly press buttons; all you need to do in auto is adjust the temperature slider on the vents, that's it.
